Kale Salad with Peaches, Strawberries & Goat Cheese


I wanted to take a break from salty, savory salads and make something lighter. Something sweet and fruity. It’s summertime so peaches and strawberries are in season and I figured I would make a salad centered around those ingredients.

I wanted a leafy green that had a lot of structure to give my salad a bit of a crunchy texture so I chose kale as the base. I’m not a fan of pre-packaged kale. It usually has way too many thick stems in it to make an enjoyable salad so I buy organic kale stalks and tear off the leaves myself.

Having a salad spinner has made washing the kale so much easier and faster so I highly recommend getting one. We use it for washing or soaking all of our produce. We also accidentally warped the bowl by putting it in the dishwasher on heat dry so it doesn’t spin quite as easily as it used to. It’s good once it’s gotten a little momentum, but it was perfect before the bowl warped. We’ll probably get the glass one when it’s time to get a new one.

To round out the salad’s flavor I added goat cheese. I had a salad with peaches and goat cheese on it at Sweetgreen I’ve been hooked on that flavor combo ever since. I topped it with a honey ginger salad vinaigrette for a bit of extra sweetness. This would probably taste pretty good with feta instead of goat cheese, but I’d use balsamic vinaigrette instead of the honey ginger one.

Last thing before I give you the recipe. Though I love a fresh peach, I usually don’t have the patience to cut one up at lunchtime. If you do, by all means, get fresh ones. But if you want to take a shortcut grabbing some frozen peach slices will do the trick too. Just leave them in the fridge so they’re thawed when you need them.

Kale Salad with Peaches, Strawberries & Goat Cheese

  • 2 cups of Kale
  • 1 large peach sliced
  • 7 fresh strawberries quartered
  • 1/4 cup of goat cheese crumbles
  • 2 tbsp of Honey Ginger Vinaigrette


  • Wash and dry produce.
  • Cut the tops of the strawberries off and then cut them into bite-sized quarters.
  • Slice your peach if you have a fresh one.
  • Place kale into a salad bowl and add the fruit on top.
  • Sprinkle goat cheese crumbles and top with vinaigrette.
  • Enjoy!
