This kale salad is tasty, filling, and perfect for a work-from-home lunch. The carrots add the right amount of crunch and the poppy seed dressing adds just enough sweetness to offset the bitterness of the kale. It’s good without the goat cheese, but the creamy tanginess of it gives it a little extra something. If you’re feeling adventurous, you can add raisins to this for another texture variation.

Kale Salad with Apples, Carrots & Goat Cheese
Ingredients
- 1 1/2 cup kale leaves add more if you’d like
- 1/2 cup matchstick carrots
- 1 fuji apple cut into bite-sized chunks
- 1/4 cup goat cheese
- 2 tbsp poppy seed dressing
Instructions
- In large bowl, place kale leaves and tear ones that are too big.
- Add carrots to bowl with kale.
- Dice apple and add those to the bowl too.
- Add goat cheese.
- Top with poppy seed dressing.
- Enjoy!
