Strawberry, Feta, Spring Mix with Balsamic Vinaigrette

I’ve had nothing but sweet salads for lunch over the past few weeks and I’m bored with it. I’m not bored enough to return to savory salads, but this salad is a good middle ground between sweet and salty.

The strawberries have a touch of sweetness that mixes with the tanginess of feta well and the saltiness of the balsamic vinaigrette ties this together well. It’s so delicious and filling that I forget it’s low-calorie and vegetarian.

Here’s how I make it. As usual, feel free to change ingredient ratios to suit your preference.

Strawberry, Feta, Spring Mix with Balsamic Vinaigrette

Prep Time 8 minutes
Course Lunch, Salad
Servings 1 serving

Ingredients
  

  • 2 cups spring mix
  • 8 large strawberries quartered
  • 1/4 cup feta crumbles
  • 2 tbsp balsamic vinaigrette

Instructions
 

  • Wash and dry produce.
  • Cut the tops of the strawberries off and then cut them into bite-sized quarters.
  • Place spring mix into a salad bowl and add strawberries on top.
  • Sprinkle feta cheese crumbles and top with vinaigrette.
  • Enjoy!
