I’ve had nothing but sweet salads for lunch over the past few weeks and I’m bored with it. I’m not bored enough to return to savory salads, but this salad is a good middle ground between sweet and salty.
The strawberries have a touch of sweetness that mixes with the tanginess of feta well and the saltiness of the balsamic vinaigrette ties this together well. It’s so delicious and filling that I forget it’s low-calorie and vegetarian.
Here’s how I make it. As usual, feel free to change ingredient ratios to suit your preference.

Strawberry, Feta, Spring Mix with Balsamic Vinaigrette
Ingredients
- 2 cups spring mix
- 8 large strawberries quartered
- 1/4 cup feta crumbles
- 2 tbsp balsamic vinaigrette
Instructions
- Wash and dry produce.
- Cut the tops of the strawberries off and then cut them into bite-sized quarters.
- Place spring mix into a salad bowl and add strawberries on top.
- Sprinkle feta cheese crumbles and top with vinaigrette.
- Enjoy!
