Protein-Packed Blueberry Lemon Breakfast Muffins

I typically don’t like to eat breakfast because I don’t feel hungry in the morning, but there are some mornings when I want something small to take the edge off when coffee doesn’t do the trick. When I haven’t planned ahead for this I will reach for whatever is easiest and fastest to eat. If we have any snacks in the house, even if it’s just saltine crackers I will demolish them.

Growing up, my parents used to keep mini breakfast corndogs in the fridge that my siblings and I could toss in the microwave before catching the bus. I used to love those little sausages tucked inside of pancake batter. It was a mini pancake breakfast sans eggs. I wanted something easy like those mini corndogs to heat up and eat on days when I’m hungry in the morning, but a little healthier. That’s how I decided to try making these muffins.

I knew making pancake batter and probably frying it to make it stick to sausage links wasn’t going to be a good idea so I thought about adding sausage to a muffin and not just any muffin, a protein muffin. Protein makes you feel fuller longer so I wanted to pack this breakfast with as much of it as I could. Between the turkey sausage and the protein from the Kodiak protein muffin mix, I think I’m good.

I’ll make these on a Saturday morning to eat that day and keep the rest to eat for the rest of the week if The Mister™ doesn’t eat them all first. If you really want that breakfast mini corndog experience you can dip pieces of the muffins in maple syrup. It’s delicious but adds more sugar to your meals for the day so I don’t do that very often. These take about 25 minutes to make, but most of that time is waiting for the muffins to bake. It’s well worth it to spend the few minutes making these to not eat whatever I can easily get my hands on. I keep what we don’t eat on Saturday in the fridge so all I have to do is heat one up and go to town!

Protein-Packed Blueberry Lemon Breakfast Muffins

  • Muffin Tin


  • 1 pack of turkey sausage
  • 1 box Kodiak Protein-Packed Muffin Mix (blueberry lemon flavor)
  • 1 cup of milk
  • 2 eggs (or egg substitute)
  • 1/3 cup of butter or oil


  • Pre-heat oven to 375ºF.
  • Combine ingredients for muffin mix as instructed on the muffin mix box
  • Thoroughly cook pack of turkey sausage into crumbles.
  • While sausage cooks, grease muffin tin with butter or oil, or line with muffin cups.
  • Spoon muffin mix into tin just under 1/3 full.
  • Drain sausage once cooked and add a layer of crumbles on top of muffin mix in tin.
  • Top with more muffin mix, cups should be about 3/4 full. It’s okay if they’re a little higher. It’ll make slightly bigger muffins.
  • Bake in oven for 12-15 minutes as instructed on box.
  • Let muffins cool before eating.
  • You will probably have batter and sausage left over so repeat til all batter has been used.
