I think I’ve found the drink of the summer! This is one of my favorite cocktails I’ve made in a long time. It’s light and refreshing and can be low-proof if you skip the vodka. I’ve made it with and without vodka and it’s delicious both ways.
I wasn’t even planning to make this cocktail, but when I bought some well-merchandised mango limeade on a whim I was inspired to try something. My first thought was to add vodka and then I thought about how the aromatic flavor of Aperol might work well with the limeade.
One thing led to another and I’d made a wildly simple summer cocktail. Here’s how you can make it too.

Mango Lime Aperol Sunset
Ingredients
- 1 1/2 oz Aperol
- 3 oz Mango Limeade (can substitue with mango juice with lime juice added to taste)
- 1 oz Vodka
- 1 oz Club Soda
Instructions
- Fill a cocktail shaker with ice cubes
- Add Aperol, mango limeade (or substitute), and vodka to the shaker
- Shake ingredients together for about 15 seconds to chill
- Pour over ice into a cocktail glass
- Add club soda and stir
- Enjoy!
