Mango Lime Aperol Sunset

I think I’ve found the drink of the summer! This is one of my favorite cocktails I’ve made in a long time. It’s light and refreshing and can be low-proof if you skip the vodka. I’ve made it with and without vodka and it’s delicious both ways.

I wasn’t even planning to make this cocktail, but when I bought some well-merchandised mango limeade on a whim I was inspired to try something. My first thought was to add vodka and then I thought about how the aromatic flavor of Aperol might work well with the limeade.

One thing led to another and I’d made a wildly simple summer cocktail. Here’s how you can make it too.

Mango Lime Aperol Sunset

The light and refreshing drink of the summer.
Prep Time 5 minutes
Total Time 5 minutes
Course Cocktails
Servings 1 serving

Ingredients
  

  • 1 1/2 oz Aperol
  • 3 oz Mango Limeade (can substitue with mango juice with lime juice added to taste)
  • 1 oz Vodka
  • 1 oz Club Soda

Instructions
 

  • Fill a cocktail shaker with ice cubes
  • Add Aperol, mango limeade (or substitute), and vodka to the shaker
  • Shake ingredients together for about 15 seconds to chill
  • Pour over ice into a cocktail glass
  • Add club soda and stir
  • Enjoy!
