I’m still on a mission to have salad for lunch every workday so I don’t want to take a nap and this is another installment. I used to eat this with saltine crackers, but I nixed those for fewer carbs and calories. This salad is just as filling without them.
If you want this to be vegan you can cut the feta and add dill weed for a bit of tanginess. I’ve done that a few times too. I’m not planning on following an entirely vegan diet, but I will cut dairy out from time to time.

Cucumber, Avocado & Tomato Salad
Ingredients
- 1 small avocado diced
- 1 cup of grape tomatoes halved
- 1 1/5 cups of diced cucumber
- 1/2 cup pitted kalamata olives
- 1/4 cup of feta crumbles
- 2 tbsp Balsamic Vinaigrette
Instructions
- Combine all ingredients in a medium bowl.
- Toss with vinaigrette.
- Add salt and pepper to taste.
- Enjoy!
