Quick & Easy Lunch: Cucumber Avocado Feta Salad

If you’re anything like me, having a hearty lunch makes you want to nap. It’s not exactly the best thing when you have work to do. I’ve been trying to come up with some easy and quick lunch ideas that incorporate more vegetables and fresh ingredients to have a healthier mid-day meal. This cucumber, avocado, and feta salad is one that I’ve been loving lately. It’s tasty and takes less than 10 minutes to whip up.

If I want this meal to be more filling or have a bit of added crunchiness I’ll eat it with saltine crackers on the side. I’m partial to the Premium Fresh Stacks because I won’t eat too many crackers. When I’ve finished my pack I’m done. Plus the crackers don’t get stale if you let them sit in the pantry for a while.

Also, this salad can easily be made vegan by skipping the cheese or using a vegan feta option to use instead.

Cucumber Avocado Feta Salad

Prep Time 5 minutes

  • 2 mini or Persian cucumbers
  • 1 small avocado
  • 1/8 cup diced shallot (can use more or less depending on your preference)
  • 2 tsp dill (fresh or dried)
  • 1/4 cup of feta cheese
  • 2 tbsp of Greek dressing
  • salt & pepper to taste


  • Wash and dry cucumbers and peel shallot.
  • Cut cucumber in half long way, place flat sides down, and cut into 1/2 inch pieces.
  • Dice shallot.
  • Put cucumber and diced shallot into a medium bowl.
  • Slice avocado into bite-sized chunks and add to bowl with the cucumber and shallot.
  • Add feta, dill, and Greek dressing to bowl with the cucumber, shallot, and avocado.
  • Mix ingredients.
  • Season with salt and pepper to taste.
  • Enjoy!
