Breakfast Quesadillas

When you want breakfast tacos but not exactly tacos make breakfast quesadillas! The Mister™ and I gave this a try on a whim to clean out some ingredients from the fridge before they went bad. We ended up loving them so much that we made them two weekends in a row. You can garnish them with sriracha (my favorite) or dip them in salsa to add a bit of a kick.

Though these items aren’t essential to making this recipe, it’s nice to have a meat crumbler to make breaking up the ground turkey easier and a grill press for toasting the tortilla. It will taste just as good without them but you will have to work a little harder to ground the meat and may have to press down on the tortilla with a spoon to flatten it while you’re toasting it.

Equipment

  • 1 medium saucepan
  • 1 large skillet

Ingredients
  

  • 4 oz of turkey sausage
  • 2 oz 2% reduced-fat cheddar (grated or shredded)
  • 2 extra large flour tortillas
  • 3 large eggs
  • green onions (to taste)
  • Sriracha or salsa f(or garnish)

Instructions
 

  • Put a drizzle of oil in a medium saucepan over medium-high heat.
  • Once the oil is warmed up, put turkey sausage in pan.
  • Cook thoroughly breaking into small crumbles.
  • Remove turkey crumbles from pan and put in a bowl lined with paper towels.
  • Using the same pan, add a tiny drizzle of oil.
  • Scramble eggs.
  • While eggs are scrambling warm up a large skillet or griddle on medium-low heat.
  • When eggs are almost done, add turkey sausge crumbles to pan with eggs.
  • Finish cooking eggs.
  • Once eggs and sausage mixture is done, place in the bowl the cooked crumbles were in.
  • Place one extra large tortilla in the large, warmed skillet.
  • Sprinkle 1/4 of the cheese on half of tortilla and let melt.
  • Spoon in half of the egg and sausage mixture on top of the melted cheese.
  • Sprinkle 1/2 of green onions and another 1/4 of the cheese on top of that.
  • Fold empty side of tortilla over side with eggs, sausage, cheese, and green onions. If you have a grill press place on top of folded tortilla.
  • Toast until crispy.
  • Remove from large skillet and repeat steps 11 to 16 for second tortilla.
  • Slice quesadillas into thirds.
  • Garnish with sriracha or salsa to taste.
  • Enjoy!
